Just Beat It Beat It Beat It Beat It No One Wants To Be Defeated - Take 2

The second month of my Eat Beats Once A Month For A Year resolution was marginally less painful than the first month.

I decided I would try borscht. I made this recipe (using vegetable stock instead of chicken.)

four medium-sized beets roasted with fresh thyme in a 400 degree oven for an hour, then peeled and roughly chopped

one large onion, two large carrots, fresh thyme, minced garlic and olive oil

vegetable stock added, simmered for about half an hour

thyme sprigs removed, soup & beets thrown in the blender

blended with 1 tablespoon honey & 2 tablespoons red wine vinegar

returned to the pot to heat through

garnished with sour cream, grated granny smith apple and chopped fresh dill

So borscht is less disgusting than the roasted beets we had last month but it is more disgusting than every other soup, ever. I do not think that I would ever choose borscht over any other soup, unless the other soup was ass soup. Ass soup is the only soup that makes borscht an appealing choice.

The problem with borscht is that there is leftovers. I actually ate borscht on two separate occasions (does that mean I can skip March?) before tapping out and taking the leftovers to my mom. Who is a weirdo and actually likes borscht.

  2. did i tell you this already? i can't remember.. i recently made beets that came out pretty tasty (although i like beets.. soo.. yeah). but anyhoo, another beet-preparation option: peel and cube the beets BEFORE cooking them. toss the raw cubes w/olive oil, a little vinegar, and sea salt, then throw 'em on a baking sheet and roast for 30 mins. 2 upsides: a) raw beet juice doesn't stain the way cooked beets do, and b) you get a lot of other flavors to kick in, like the salt and vinegar, and the sweetness in the beets caramelizes a bit when they're roasted w/o the skins.

  3. I'm pretty okay with beets in that I'll eat them if they happen to appear on my plate, but nothing about borscht sounds appealing to me. Especially the fact that it's usually served cold, right? Gross. The thought of cold soup confuses and annoys me.

    And yes, I think you're allowed to skip March now.

  5. Sorry it didn't turn out to be very yummy. At least it looks pretty, and you were able to give it away. I feel like pickled beets from a jar on a salad aren't that bad. Maybe you could try those in March!

  7. The soup looks delish (from a beetlover's perspective). maybe try yellow beets for March. They taste the same but look so cheery.

  8. Wow, this looks about a bazillion times better than it did when I made it. I didn't use a blender, which I think was my first mistake. No one likes to chew their soup.

  9. Haha awesome resolution! I can't stand beets but I think I am slowly coming around (being half Finnish and Norwegian this was a great concern to my beet-loving parents). I could actually do with that soup!

  11. Not sure that I'd like the borscht. I do enjoy an occasional beet, though! My mom makes them by steaming them in the pot we use for artichokes and asparagus, and then does some balsamic vinegar marinating and adds feta cheese. Super tasty.

    Hillary, I am not usually one to tell people to give up on the goals for themselves. But just give it up already. You hate beets. It's cool. We won't judge you.
